A while back, I found a recipe for a Cobb salad dip that the boyfriend and I devoured in one sitting. It was most definitely not the healthiest thing in the world, but it was delicious. All I remember was that it included Cobb salad ingredients with a cream cheese and Hidden Valley Ranch mix base. Faced with a weigh-in tomorrow and Super Bowl hostess duties tonight, I decided to try my hand at making this dip into a yummy, healthy creation and, I must say, I’m quite impressed with myself!
Ingredients:
2 cups of non-fat plain Greek yogurt
1 packet of Hidden Valley Ranch dip mix
1/4 c. crumbled Gorgonzola or blue cheese small can of corn, drained
1 pint of grape tomatoes, quartered
6 slices of low-sodium bacon, cooked and crumbled
Directions:
In a medium-sized bowl, mix the 2 cups of non-fat plain Greek yogurt with the packet of Hidden Valley Ranch dip mix. Once the two are combined, top with 1/4 c. of crumbled Gorgonzola or blue cheese. Layer your corn on top of the cheese, the quartered tomatoes on top of the corn, and top with your crumbled bacon. Makes…. well, at least 8 1/4 c. servings. Serve with veggies, pitas, or tortilla chips. (We’re being obnoxious and serving it with Naan crisps tonight!)

Now, I have to be honest with you… I thought this would be pretty healthy, so when I entered my recipe into MyFitnessPal, I only entered it as making a single serving. Be ready to be wowed and amazed, my friends…

Obviously you wouldn’t want to sit and eat the entire bowl, but I thought this would put it in to perspective of how this rates compared to some of the other Super Bowl options. Of course, feel free to experiment and put your own spin on it! I think this would be great with some peppers, avocado or even hard-boiled egg or chicken crumbled up on it.
